Mexican Robata combines Mexico’s bold flavors and ingredients with Japanese robata grilling technique. Traditional robata uses binchotan charcoal to slowly cook skewers over open flame, creating smoky, deeply caramelized dishes layered with umami. At Bar Tako, those techniques meet mole, yuzu kosho, tamarind, citrus, chile, and other Mexican flavors.
